Duck, Duck, Mousse

Food markets tell you a lot about a place. It seems that here in Montréal (and in the rest of Québec) people love their duck. Whole duck, sliced duck, stuffed duck, whipped duck, duck rillettes, duck pies, duck burgers, duck sausages, duck ravioli, frites fried in duck fat, duck dog treats. Duck duck duck.

I’ve never been terribly fond of duck, but maybe the duck here is better. It’s certainly popular. But due to the recent outbreak of bird flu here in the province—the first ever in Québec—I don’t think I’ll be diving in just yet.

Fyi, a whole duck is cheaper than a bag of cricket pasta.
